how does the enzymes decide the time of release?

In case of digestion when the food products reach a particular part of the digestive system, the exocrine glands are stimulated to release their particular enzymes. For example, when the food reaches the small intestine, various enzymes are released into the enzymes by pancreas and intestinal glands.
