When apricot is placed in a hypertonic (solution having high sugar/ salt concentration) solution, osmosis (exosmosis- movement of water out of apricot) occur. It helps in the long term peservation and use of apricot.
Dried apricot, when placed in hypotonic solution (sol. having low salt/ sugar conc.), osmosis (endosmosis - imward movement of water) occur which leads to swelling.
