In mechanics, u represents initial velocity and v represents final velocity.
In optics: u represents object distance i.e., the distance of the object from the pole of the mirror/optical centre of the lens.
And v represents image distance i.e., the distance of the image from the pole of the mirror/optical centre of the lens.
