Why and in which direction do we take 'g' {acceleration due to gravity} as positive?

It is always downward...which ever direction of yours is downward.
 
YOU ARBITRARILY set a sign convention, as per your own convenience, such that either upward is positive kinematics or downward is positive kinematics.
 
If upward is positive kinematics, than acceleration due to gravity corresponds to an acceleration of -g.
If downward is positive kinematics, than acceleration due to gravity corresponds to an acceleration of +g.
