The stomach acids do not get diluted to a great extent by drinking sufficient amounts of water.

The food consumed doesn't fully digest in five minutes but takes several hours. Also we rarely drink a full 200 ml of water in one go while eating, we usually sip it. Food itself, protein specifically, induces a rise in pH anyway. Drinking water therefore probably has very little effect on gastric pH or on digestion.
