can we use any other symbol accept theta in the formula - W = f x cos x 'theta'?

yes, of course, you can use any symbol other than theta.
actually it is just an angle between force and displacement which we need to know. So, if you are naming that angle as alpha, beta, gamma, a, b or anything you like than you just mention it and name it.
